Chef Eddie Huang kicks off his new web series “Fresh Off the Boat.” His first stop in the San Francisco Bay Area is Oakland, CA where he hangs with a local biker gang to show hipsters how to shoot guns and hunt for rabbit. After a few gruesome hours in the Oakland outback, they head back to the club house to shoot the breeze and throw back a few cold ones. Eddie reflects on the disconnect between people/chefs and the process it takes to put meat on our plates, all before cooking up a delicious meal of southern style deep fried rabbit. Cooking seafood like a live lobster is one thing, but slaughtering an animal is a whole different process. This is one show you will not see on the Food Network or the Cooking Channel. Definitely eye opening.

Fresh Off the Boat is a genre-bending venture into subculture through the lens of food. Raw, wild, and heartfelt, Eddie Huang gets down in the underbellies of cities around the world in search of what’s cooking in their back alleys and underground spots. He’s hunting rabbits with biker gangs in Oakland, eating seafood and surfing in Taiwan, hitting low-rider BBQs in East LA, and dining on rice and beans with your drug dealer’s grandmother in Miami.

Hosted by chef Cathlyn Choi, Cathlyn’s Korean Kitchen produced in full HD, showcases delicious, nutritious and easy to make Korean cuisines featuring both traditional and fusion ingredients as well as exploring the many cultural aspects of Korean foods. Cathlyn’s special guests Woody, the Liquid Chef and Dr. Dia add their own fun to the shows Korean ingredients! Cathlyn’s passion for her native Korean foods called “Hansik” has led her to become one of the most recognized celebrity chefs in the world.

Born in Vietnam to Korean parents and having lived in South East Asia and Korean for over 30 years has taught Cathlyn to appreciate many different Asian foods and cultures. Taught the traditional Korean way of cooking from her grandmother and mother, Cathlyn incorporates her different ingredients and flavors into her unique Korean cooking techniques to develop her own style of traditional and fusion Korean recipes. You can expect to see some of these recipes prepared during Season 4.

Unofficially dubbed the “Korean Food Ambassador”, Cathlym has also been recognized by the South Korean Government for the efforts to promote Korean foods in the US through her cooking show and live cooking demonstrations.

Since age 11, Cathlyn developed a passion and sense for cooking by watching her mother and grandmother cook. At age 13, she also helped her parents with their catering business in Brunei for 5 years. Cathlyn acquired a sophisticated palate through years of living and traveling throughout Asia and other European countries, sampling and cooking various kinds of cuisines. Since then, Cathlyn has developed over a thousand traditional Korean and fusion recipes.

In February 2009, with the help of her husband and co-producer Eric Michelson, the first Korean cooking show in the US was launched on a local TV station in San Diego. Then in September of 2009, Cathlyn signed a contract to launch Season 2 of Cathlyn’s Korean Kitchen nationwide in November. Season 3 entitled Cathlyn’s Korean Food Challenge was launched in 2011. Cathlyn’s Korean Kitchen Season 4 is scheduled to air on national PBS in fall of 2012. All the background music on Cathlyn’s cooking show are originally composed, arranged and/or performed by Cathlyn.

Seoul Sausage wins The Great Food Truck Race Season 3

Following instructions Tyler gave in Cleveland, the final two teams (Seoul Sausage and Nonna’s Kitchenette) cruise into Boston on the first leg of their “multi-city race to the finish.” In the middle of their shift, Tyler calls and tells the teams they must add a true blue New England lobster dish to their menu. Seoul Sausage’s finale strategy is straightforward: “Basically we’re going to keep the same menu,” Chris explains. “Why fix something that’s not broken?” The guys serve their crowd-pleasing kimchi rice balls plus cheesy tater tots, burgers and more. Both teams start selling immediately and draw extra-long lines of customers in no time. Two authentic lobstermen taste the dishes and award the winner a huge cash advantage and a head start … to Portland, Maine (108 miles north), where the teams will sell next. Though Captain Clark Sandler appreciates the flavor of Seoul Sausage’s lobster roll, he deems Nonna’s Kitchenette’s lobster cake to be the best dish of the day. Tyler grants them a $500 prize and the right to immediately advance to the next city, Portland, Maine. The losing team stays behind and “helps” a local restaurant. They must shuck nearly 600 pounds of clams before they can drive to the second city. When Seoul Sausage arrives in Portland, the team tracks down Nonna’s Kitchenette and parks near them. “We always do well against another truck when we’re right next to each other,” Yong explains, “so this is right up our alley.” On Sunday, the teams sell head to head in Portland, but Tyler calls again and sends them to their third and final destination: Lubec, Maine. Since Lubec is a small town with just 1600 residents, Tyler directs them to Water Street and enforces a price cap of only $2 to ensure that the teams will find business. Seoul Sausage and Nonna’s Kitchenette are able to sell for just a few hours in Lubec, but it’s those final sales that will ultimately determine the winner of the competition.

Finally, Tyler gathers the teams at the West Quoddy Head Lighthouse (the easternmost point of the United States) and collects their cash boxes. When the teams arrive, Tyler counts their money in front of them … and the winner drives away in their new food truck, along with $50,000 to get their business started. The group takes a few moments to reflect on the race before finding out who has won. Tyler announces that after a 3,559-mile journey across 15 states, Seoul Sausage has won the keys to their dream food truck and $50,000 to start their business. Ringing up $6,673, the guys outsell Nonna’s by just $103 dollars. “I don’t know how to react right now,” Chris says. “We just won The Great Food Truck Race. This was huge.”

Getting you line tangled up and hooking a tree doesn’t get you closer to catching a fish. Afterwards, they head to Aw Shucks, where the get a lesson in cooking crawfish and shucking oysters. The winner of the oyster shucking contest will prepare the loser’s oyster. That’s never a good thing between these brothers. See what the menu is on tap after all their hard work.

Aw Shucks Crawfish Recipe:

24 oz Crawfish seasoning
12 oz lemon juice
12 oz worchestershire sauce
12 oz granulated garlic

Put all ingredients in 32 qt stock pot filled ¾ full of water. Bring to slow boil. Add live crawfish using a strainer and cook for 5-6 minutes until bright red. Gently lift the crawfish from the pot and drain. Put the cooked crawfish in a large container and sprinkle generously with crawfish seasoning shaking to coat evenly. Seal container and allow crawfish to steam for 2-3 minutes. Shake container just before opening and pour cooked crawfish on to a platter. Sprinkle lightly with lemon juice and granulated garlic before serving.
